Dirty Rice Stuffed Tomatoes

8 medium tomatoes

8 oz of bulk mild Italian sausage

1/2 cup chopped white onion

1/4 cup finely chopped celery

1/4 cup finely chopped green pepper

1 clove garlic, minced

1.5 cups cooked long white grain rice

1/4 cup chopped Italian parsley

1 Tbsp. Worcestershire Sauce

1/2 tsp Creole Seasoning

1/8 tsp dried Sage

olive oil


Cut tops off tomatoes, set aside. Hollow out tomatoes, keeping pulp from about 3.

Brown sausage, and then add onions, celery, sweet peppers, and garlic.

Cook 5 minutes.

Add rice, parsley, Worcestershire Sauce, Creole Seasoning, sage, and hollowed out tomato pulp.

Season with salt and pepper.

Spoon into tomatoes until almost overflowing and place in shallow baking pan. Place tops on tomato, drizzle with olive oil.

Bake 25 minutes at 350.
