Minted Pea Crostinis

3 cups of frozen peas, thawed

1 cup of mint leaves, packed

1/2 cup flat parsley leaves

1 cup extra virgin olive oil

2 Tbsp. of fresh lemon

Salt and Pepper (just a little in this recipe)

Crostinis (or just bagel chips, but crostini works better)

Put 1/3rd of the peas into a food processor with mint, parsley, olive oil, and lemon juice. Puree. Stir in remaining peas and then salt and pepper to taste. Spread on crostini.
