Sweet Potato Hash

Sweet Potato Hash (Lori-Style)

3 lbs of sweet potatoes, peeled and diced into 1/2″ cubes

8 Tablespoons of unsalted butter

3 tsp of coarse salt

1 tsp of freshly ground pepper

2 large onions, chopped

2 green peppers, chopped

2 sweet peppers (red preferred for color), chopped

4 garlic cloves, minced

16 oz of sage breakfast sausage, browned and crumbled

2 scallions, white and green parts, sliced

 

Parboil sweet potatoes x 5 minutes, and spread out on clean towel to dry. Melt half the butter, and half the salt and pepper, and cook potatoes without turning in a skillet until brown on one side. Turn and brown the other side. Transfer to a plate.

Melt remaining butter and cook the remaining veggies, about 7 minutes. GENTLY mix in potatoes and sausage, and remaining salt and pepper. Serve topped with scallions.
