I wish I had a picture of them roasted, but here they are almost ready to bake. They were eaten so quickly, I did not get a picture of them on the buffet line.
Herb-Roasted Turkey Legs
I got CRAZY this year and made only turkey legs for Thanksgiving. Folks straight up told me I should be committed for not making a turkey. I was serving a more casual, candlelight supper for Thanksgiving, so I was in the mood to mix it up a bit.
LET ME TELL YOU NOW….this plan was straight-up AB-FAB. BEST.TURKEY.LEGS.IN.HISTORY.
1/4 cup salt
1/4 cup turbinado sugar
1/4 cup fresh thyme
1/4 cup fresh rosemary
3 bay leaves
2 garlic cloves
Process this all together. It will season about 8 large turkey legs. Place turkey in a container that can be covered, rub on the herb rub and cover and chill for 15 hours.
Discard juices. Heat oven to 400 degrees. Pour 1.5 cups of broth over legs, and let it stand for 30 minutes.
Bake for 1 hour, basting with pan juices every 20 minutes.
Lower oven to 350. Bake for another 1.5 hour to 1 hour 45 minutes, turning and basting every 20 minutes.
Take out and rest for 10.
