Mushroom, Leek & Tortellini Soup
Olive Oil, salt and pepper
Mushrooms, dealer’s choice, I usually cut about 6 oz.
2 large leeks, cleaned and cut into 1/4th inch rounds
6 cups of chicken broth
4 chicken sausages, sliced into 1/3rd inch rounds
9 oz cheese tortellini
3 cloves garlic, minced
Cook mushrooms and leeks in olive oil. I used the soup stock pot to make this a one pot meal. Take out and set aside after about 5 minutes.
Pour in chicken broth, bring to boil. Add in sausage and garlic. Reduce heat, add in mushrooms and leeks. Simmer about 15 minutes. Add in tortellini and cook until done (probably less than 5).
I like garnished with cilantro. Kelly does not. This recipe has a lot more flavor than meets the eye (thank you leeks).
