Sweet Potato and Sausage Bites
I found a version of this in a Southern Living, and then played with it a bit.
1 lb sausage (breakfast if serving this at brunch, or Italian for dinner)
2 cups Bisquick
8 oz of sharp, shredded Cheddar cheese
1/2 cup chlled mashed roasted sweet potato (I tried boiling it first…blah. No flavor. DO NOT use more than 1/2 cup. It won’t set.)
1/8 tsp. cinnamon
1/8 tsp salt
350 degrees, lightly greased baking sheet.
Mix it all together and bake in 1.5 inch balls for about 20 minutes. Larger balls won’t cook through before burning.
It’s a little bland, so perfect for kids. For adults, I recommend dipping these in something sweet/tangy, like a plum or apricot jelly. I recommend warming it on the stove with a little lemon juice first.
