From Quick Cooking:
I don’t know why anyone would call a recipe with mashed potatoes “quick cooking”, because there is nothing “quick” about mashed potatoes. Still, this is worth making. Sara scrubs the potatoes, which I then peel, but it gives her something to do. I usually double this recipe. Don’t shred the cheese too fine or it won’t fold well with the whipped cream. Use cheddar, because the white cheeses burn too quickly at 450 (at least in my oven). I serve this with Caesar Salad, which oddly, the girls will eat. They won’t touch salad unless it’s Caesar. Might it have something to do with the fact that I hate about one million Caesar Salads during my pregnancies?
2 cups mashed potatoes
3/4 teaspoons garlic salt
1 cup diced fully cooked ham
1 cup shredded cheddar cheese
1/2 cup whipped cream
In a bowl, combine the potatoes and garlic salt. Spread into a greased 1.5 quart baking dish. Sprinkle with ham. Fold cheese into whipped cream, spoon over ham. Bake, uncovered, at 450 for 15 minutes.
