Fire Station Chicken (super easy freezer meal)

From Super Suppers:

3-3.5 lbs chicken, cut into 8 pieces (I use thighs, or whatever I have…better if it’s on the bone)

1-28 oz bottle smoky bbq sauce

1-16 oz can pineapple chunks, undrained

2 cups coarsely chopped onion

2 cups coarsely chopped sweet pepper

jalapeno (optional)

Mix this mess together, except for the chicken.  Rather than use 8 pieces of chicken, I usually triple this recipe and buy a huge slab of thighs.  I put about 4 thighs into each freezer bag and then divide the mixture evenly into the bags.  It will freeze for up to 2 months.  So that’s 9 lbs of chicken, meaning, go to Sam’s Club.  Defrost for the day in the fridge, stick it in a heavy bottomed pot, and bring to a boil over medium-high heat.  Lower heat to medium low, cover, and simmer for about an hour.  It’s really good.  I’ll bet I’ve made this meal 20 times.  Sometimes I keep a small flat of thighs and the ingredients in the pantry, just in case I have an “I don’t want to cook night”.  It’s just too easy not to make!
