Sausage and Cinnamon Apples

From “Super Suppers Cookbook:

Loving this…will be making this recipe many times this winter.

16 oz tube ground, seasoned sausage (I found apple sausage at Sam’s Club and I highly recommend it)

16 oz fresh apple slices (recipe calls for undrained cans, but I simply cannot buy canned fruit…ick)

1/2 cup brown sugar (or to taste)

1 teaspoon ground cinnamon

1 teaspoon butter

1/2 teaspoon vanilla

Cut the sausage into 1/2 inch slices using a serrated knife and peel off the tubing.  Cook over medium high heat until cooked through.

While sausage is cooking, place apples in a saucepan, and add the brown sugar and cinnamon.  Bring to a summer over medium low heat.  I must have added water because I didn’t use canned apples.  Stir in butter and vanilla.

Serve the apple mixture over the top of  the sausage

I think I used Jonathan and Winesap apples for this recipe.  I’d actually prefer sweet over tart with this one, even with the brown sugar.  No sous chefs needed…this recipe comes together in no time flat.
