Apple Cake

I have tried and tried to remember where I got this recipe.  It was a blog.  I’ve requested permission from many ‘o’ wrong author.  Everyone has been lovely about writing back and telling me it isn’t their recipe.  I’ve made it countless times…just so good.

Apple Cake

6 Apples (I use Ida Reds, Winesaps, and Jonathons.  McIntosh is a good choice, but Granny Smith is not)

1 Tbsp Cinnamon

5 Tbsp Sugar

1 cup chopped walnuts

Mix this all together and set aside.

2 3/4 cup flour

1 Tbsp baking powder

1 tsp salt

1 cup vegetable oil

2 cups sugar

1/4 cup orange juice

2.5 tsps vanilla

4 eggs

Preheat oven to 350 and grease and flour a tube pan or pound cake pan.  Stir together flour, baking powder and salt.  In a separate bowl, whisk together oil, orange juice, sugar, and vanilla.  Mix wet ingredients into dry ones, then add eggs, one at a time.  Scrape down the bowl to ensure all ingredients are incorporated.

Pour half the batter into prepared pan.  Spread half the apples over the top of it.  Pour remaining batter over the apples and arrange the remaining apples on top.  Bake for about 1.5 hours, or until tester stick comes out clean.

When cooled and popped out and over, top with sprinkled powdered sugar.
