When we got back from picking and shopping yesterday, I thought maybe I had gone overboard in my summer excitement. But, by nightfall, we’d eaten the corn and the sweet peppers (that didn’t fit in this picture). The strawberries and lemons became much-loved cups of frozen strawberry lemonade, with the rest waiting to be turned into jam. The apricots became jam last night (my first attempt at apricot…not sure of the results yet), and are setting up on the counter as we speak. The bananas were paired with blueberries and white and red raspberries this morning and turned into baked oatmeal, a new favorite recipe which I read about here, and found here. It looks long, but after making it a couple of times, you won’t even have to measure. Cannellini beans are simmering in sage on my stove for dinner. And I’m remembering why my house never looks picked up in the summer. Martha herself couldn’t stay on top of this mess. I’m letting it go…I’m too busy eating. And chopping. And eating. And stirring…

Now that looks like good eats! 🙂 That baked oatmeal recipe sounds fantastic. I may give it a try this summer. I better try it this week or I may forget about it in the weeks to come. Eek!
