I’m not much of a beef stew person. I don’t like my potatoes to taste like beef, and vice versa. There are flavors that should mix (i.e., as in soup), and flavors that should be distinct. Hence, the only thing you ever find in my crock pot is spiced cider. That being said, we live in a cold climate, and some warm foods just sound good this time of year. I knew if anyone could jump this gap for me, it would be Sweet Paul. He joined the flavors with red wine, which when stewed for an hour (not all day in a crock pot), pulls the entire dish together and suddenly, the marriage between carrots and beef is made. Additionally, he uses shallots, which are far more delicate than a big ‘ole yellow onion, and rather than chunks of mushed potatoes, his recipe mashes them and layers them at the last second. PERFECT!!
