GRILLED PESTO SHRIMP TACOS
This is a fun one! I threw it together one night after Kelly begged for the 100th time for “fish”. I assumed she meant shrimp…turns out…she wanted tuna. Oh well, this dinner was delicious all the same.
1 lb of medium uncooked shrimp (large won’t fit in your shells and small will overcook)
Package or jar of pesto
Cajun seasoning
Lemon Juice
Roma tomatoes, chopped and seeded
Monterey Jack cheese, shredded (I really think this cheese is right, and I wouldn’t substitute with another kind.)
Shredded lettuce
Black beans
Shells of choice
Directions:
Shell the shrimp and marinate in a small amount of olive oil, lemon juice, Cajun seasoning, and salt and pepper. Warm the black beans in a saucepan with a small amount of the same marinade.
Grill the shrimp (I prefer the grill side of my griddle, but any grill will work). Baste with pesto sauce and a bit of salt and pepper as it cooks. Flip, as only a couple of minutes is needed per side. Be generous with the pesto sauce.
Mix the shrimp with the black beans for service.
Assemble tacos with your shrimp/bean protein, cheese, tomatoes, and lettuce. I added sour cream to mine and it worked. I served this with a side of guacamole, which I always top with chopped tomatoes.
