Tomato & Sage Ham and Beans
This meal a typical go-to at our house. I always think it’s fast and easy, and then laugh when I make it…because nothing in my kitchen is fast or easy.
To feed a family of 4:
1 can Cannellini Beans
1 can Black Beans
1 can Pinto Beans
1 can Red Kidney Beans
1-2 Tbsp. Fresh sage, finely chopped
Ham, chopped, or any kind of Sausage (I use all kinds!)
Large can of Diced tomatoes, drained
Cumin (I just start with a tsp. and then taste until it’s where I like it.)
Salt and Pepper
White Onion, diced
3 Cloves Garlic, diced
Parmesan Cheese, shaved
Mix this mess together in a large, deep baking pan. Add water until it’s easy to mix. Bake covered at 350 until heated through and sausage is cooked (ham is usually cooked at purchase, so just bake until heated through). Take off cover and sprinkle with shaved Parmesan cheese, and bake until melted. Add cornbread, and your done. Sometimes I serve this with a side of roasted broccoli, but that’s because I have a “thing” about having something green at every meal.
